For reasons completely unknown to me, I recently developed a craving for Lilt.
For those unfamiliar with Lilt, it’s a pineapple and grapefruit-flavoured soft drink produced by the Coca-Cola Company.
I had been messing with a couple of batches of watermelon granita earlier in the week, so what’s one more?
There’s not a lot to it really, so this will be a pretty short post!
Pineapple and Pink Grapefruit Granita
250g Pineapple, peeled and cut into chunks
200g Pink or Ruby Grapefruit, peeled and segmented
Juice of half a lime
3 – 4 Tablespoons of sugar (to taste)
Put all the ingredients into a blender, and blend till smooth. The mix is likely to have pulp and membrane from the fruit left in it, so I like to pass it through a sieve or strainer to get it nice and smooth.
Pout the mixture into a freezable container, and place in freezer for about four hours. Remove and scrape any frozen bits with a fork to break them up. It will probably be still quite slushy at this stage, so continue to freeze for a few more hours, scraping as you go, or just leave it overnight and have a good go at it the next day.
The nice thing about this combination is that the blended pineapple gives it an almost creamy texture rather than overly icy, making it easier to scrape up.
